Cauliflower Pizza

A lighter and healthier version of pizza. Instead of using white flour, the crust is made of cauliflower and cottage cheese.

Add additional toppings for variety.

Ingredients

per serving

  • 14 oz fresh cauliflower
  • 3.5 oz cottage cheese
  • 2 eggs
  • 2 tbsp ground almonds
  • 2 oz chopped tomatoes
  • 2 oz fresh spinach
  • 3.5 oz water packed tuna
  • .5 red onion
  • Cracked pepper for flavor
  • Salt (Himalayan, Sea, Kosher, or Iodized) for flavor

Directions

Slow Cook (4 Hours)

  1. Sauté onions and garlic in olive oil until onions are translucent.
  2. Add sautéed onions and garlic, along with the rest of ingredients to the crock pot and slow cook on high for 4 hours, stirring occasionally.

Stove Top (1 Hour)

  1. Sauté onions and garlic in olive oil until onions are translucent.
  2. Add rest of ingredients. Bring to a boil and then simmer for at least 20 minutes, stirring occasionally. The broth should begin to thicken. Simmer for up to 40 minutes.
